Lots o’ Leftovahs

Bonjour all you cheeky chats.  I hope your first day back at work after the long weekend went well!  If you work.  And if you had a long weekend.

I was actually excited to get back into my routine of regular eating today.  Though I ate fairly healthily over the weekend, I snacked a lot.  There were leftover crackers and cream cheese from when the girls were here on Friday, and I snacked on those late at night pretty much from Friday to Monday.  I try to avoid late night snacking usually, but this is a lot trickier on weekends.

I also bought a bag of mini Reese’s Peanut Butter Cups (my fave fave fave) for us to enjoy on Friday, and they pretty much went untouched, so I had no problem polishing off that bag over the rest of the weekend.

Luckily we had a bunch of leftover healthy food also from the weekend chilling in our fridge, which made healthy eating today a breeze!  Both my lunch and dinner incorporated my weekend eats.  Hurrah for not wasting food.

Last night I made Ando and I turkey burgers combining lean ground turkey, half a sliced yellow onion, a tablespoon of garlic salt, a packet of soy sauce, and two eggs.  I shaped the mixture into five burgers and Andrewski barbecued up those bad boys until they were ready for eatin’.

I enjoyed mine on a whole wheat bun with lettuce, tomato, ketchup and mustard.  Pretty darn yummy scrumboes, and possibly rivaled my turkey burger from Flo’s Diner last week.  I missed the feta and the mushrooms though.

Since we had extra burgers in the fridge, I decided to incorporate one into my lunch today.  I crumbled it up on top of a big ol’ salad!

Leftover Turkey + Salad

The salad included lettuce, baby spinach, tomato, cucumber, and chopped roasted asparagus (leftover from Sunday night’s dinner) with Italian dressing.  It was super yummy, and I wished it was never ending.  It was filling also, and I didn’t even need to supplement this with a Druxy’s soup!

Tonight’s dinner was kind of a random mismatch of things.  First of all, spaghetti squash:

Spaghetti Squash

I topped my spaghetti squash with Prego pasta sauce and leftover meatloaf from Sunday, then I heated everything up, and dug in.  Doesn’t it look like…spaghetti?!  Nope, all squash.  Zero noods.

I first made spaghetti squash for myself on Saturday by cutting open an entire spaghetti squash, removing the seeds, placing the squash face-down on a cookie sheet sprayed with cooking spray, and then baking it in the oven for about 40 minutes a 375 degrees.  Once it was done, I pulled it out and forked out the “spaghetti” (no pictures of the actual process, sorry).

Let me just say, it doesn’t taste like noodles…actually the squash itself doesn’t have much of a taste at all.  But that’s okay with me, my friends, because I am all about the sauce!  Covered in marinara sauce, you can hardly tell the difference besides the slight crunch the squash has.  Pretty tasty.  And I don’t feel guilty about eating an entire gigantic bowl the way I would with regular pasta.

On the side of this, I had some parsnip fries that I made last night to go with our turkey burgers.

Interesting dinner combo for sure.  But it worked!  I was full and happy.

Tuesday Dinna

Yumfest.

I’m off to do some leisuring.  I had planned on going for a run tonight but I ended up doing work when I got home until 8:30!  Yowza.  I will be SO happy when my magazine goes to print… fingers crossed for tomorrow!

Also, tomorrow morning I am running for sure.  I am getting up super early and doing it so it’s done, because the evenings are so short and I’m constantly trying to find more time.  I’m hoping if it’s written on here I’ll actually get up and do it…

Question: What is your favourite thing to do on a long weekend?
My fave is COTTAGE!  Hands down, no competition!  I want to sit outside on the dock in the sunshine with a beer all day and go swimming in the lake and have fires and go boating and waterkiing and do all things cottagey.  I love it.

  1. My fav thing to do on a long weekend is catch up on sleep!! Or read a good book. While laying in bed or on the couch still being lazy 😛

  2. I love PB cups. Though I’m on an off cycle with them b/c I think I burned myself out a bit on them…by eating too many, obviously.

    Lake cottage sounds amazing. I love just hanging out and sunning and drinking. Though I really want a beach house! Husband’s family used to have this tiny, one room house that you had to start the plumbing and electricity every time. I loved it there. I convinced them to keep it after they moved so we could still use it! Sad we had to move and leave it.

  3. I want to try spaghetti squash but I can never bring myself to buy it! I feel like I would like it, but I would probably top it with cheese & make a lazy lasagna or something. Does it have a spaghetti-like texture? And I am all about the turkey burger salad!

    • I actually liked it more than I thought I would. The texture is a bit different from noodles, that was prob the main thing I noticed about the squash. Definitely not as soft as I like my noods, but it wasn’t a big deal.

    Maybe you can just quit your job and come cook for us and the new baby….
    Unfortunately we can only pay you in high fives. I have heard they are very valuable in some countries though…
