Bonjour my cheeky food-loving (I hope!!!) pals!
Before I get into my dinner details, someone please tell me…does this look comfortable?
That is my crazy kitty Dexter in his new favourite sleeping spot. I am not a cat (obv) but I would assume that snuggling up in a corner of the couch surrounded by loving owners and cradled by soft blankets, where you don’t even have to hold up your own body weight, would be more comfortable than this.
I think he chooses this spot so he can watch us come up from downstairs.
Instead of pulled pork I made pulled chicken by putting two large boneless, skinless chicken breasts in the crockpot this morning along with low sodium chicken broth. After work, I shredded the chicken with two forks and topped with my fave BBQ sauce. I served it on a whole wheat sandwich thin alongside roasted green beans that I lightly sprayed with olive oil and sprinkled with garlic salt before baking (by far my favourite method of cooking veggies).
Almost like green bean fries!
Everything was very palatable (sidenote, I am running out of ways to say delicious! I just looked up synonyms and palatable was the first word that popped up. I think I can do better).
It was yummers in my tummers.
Work it Out
Tonight’s workout was harrrrd to get through. I think all the Valentine’s chocolate I have been consuming over the last two days made me sluggish. I hit up the treadmill and had to remind myself several times why the treadmill is not boring. I ended up completing a half hour run, followed by 20 minutes on the arc trainer while I read A Dirty Job by Christopher Moore (love him!) It was tricky to stay motivated for sure, but hey, I’ve never regretted a workout!
Welp, I’m off to watch Glee! Later gators!
